Denis's grandfather, François-Albert Macquin, was the first to replant vines in Saint-Émilion after the phylloxera outbreak. The couple own 27 hectares across Saint-Émilion and Pomerol and are involved in every vineyard and winemaking decision.\u003c\/p\u003e\n\u003ch3\u003eThe Vineyards\u003c\/h3\u003e\n\u003cp\u003eSaint-Georges is the smallest Bordeaux appellation. At up to 89 metres, it has one of the best elevations on the right bank, which gives its wines freshness and concentration. The south-facing vines are 15 to 60 years old and grow on clay and limestone. They're farmed sustainably, without herbicides or chemical fertilisers.\u003c\/p\u003e\n\u003ch3\u003eIn the Winery\u003c\/h3\u003e\n\u003cp\u003eAfter three weeks of maceration, the wine is fermented in temperature-controlled stainless steel.
