Wine Flight Selection - Professionals Series with Matthew Ryle
To match with Matthew and Dean’s menu, we have sourced a selection of exciting wines from the classical regions of France. First, enjoy “Charles” Rose (Dean’s favourite NV champagne) while preparing and sitting down to your first course – it’s also stunning with the next one too. Jean-Claude Boisset’s `Château London` from the Mâconnais is a wonderful paring to Dean’s signature Lobster (even save a small glass for dessert). For Matthew’s classically inspired Entrecôte de boeuf we look towards the right bank of Bordeaux and are delighted to pair a Grand Cru Saint-Emilion from Chateau Tour de Capet. Some times the classics just work best!
NV Rose Réserve, Charles Heidsieck, Champagne, France, 37.5cl. 12% ABV
A deliciously fresh wine which perfectly expresses the complexity of the Charles Heidsieck spirit. Coral-like in appearance, with subtle orange reflections reminiscent of antique roses. Freshly picked strawberry aromas gradually become more intense, with home-made strawberry jam and blood peach alongside rich, warm notes of gingerbread and cinnamon. A vivacious palate full of red fruit, with some generous floral notes. Following a silky-rich texture, the finish is long and balanced.
2018 Mâcon-Igé `Château London`, Jean-Claude Boisset, Burgundy, France, 75cl. 13.5% ABV
An expressive nose with aromas of white flowers, white peach, citrus layered with rich buttery notes. This wine is round with lovely fruit concentration on the palate lifted by fresh acidity. The finish is long and lively.
2014 Saint-Émilion Grand Cru, Château Tour de Capet, Bordeaux, France, 75cl. 12.5% ABV
This wine is intense purple in colour, with aromas of dark berries, tobacco and mint with hints of spice and vanilla. On the palate, it is full bodied with soft, velvety tannins and a long, juicy finish.
