Gallina de Piel, `Ikigall`
A fragrant Catalan white from Gallina de Piel, the winemaking project of former El Bulli head sommelier David Seijas.
75cl | 12% ABV | Penedès, Catalonia, Spain | Xarel-lo, Malvasia & Muscat
Tasting Notes
A fragrant white with subtle orange blossom and fennel accents, offset by a crisp saline finish and zesty acidity.
The Producer
David Seijas was Head Sommelier at three-Michelin-starred El Bulli. He works with local growers in Catalonia, Aragon and Galicia, using indigenous grape varieties to make versatile, food-friendly wines with elegance and a sense of place.
The Vineyards
Organically managed vines over 60 years old grow at 160 metres on silty loam and sandy soils. These soils give a good balance of concentration and freshness.
In the Winery
Five hours of cold maceration builds texture and aroma. The wine is fermented in stainless steel at 15°C, then spends four months on fine lees.
Pair it with: our Scottish Scallops, or try its red sibling, Roca del Crit.
